How would countertops made of schist compare to granite in terms of durability?
It depends on the type of schist - they are all different. Some schist is very hard, durable, and compact. These varieties would make an excellent choice - as durable as granite and often with more color and texture. Other varieties of schist can be on the other extreme and therefore unacceptible as countertop material. Look at the specific schist you will be using and imagine cutting, rending, tearing, and spilling on it.
